The Monte Enebro is a very special cheese, handmade exclusively by legendary cheese maker Rafael Baez and his daughter Paloma in Avila, Spain. Its special shape gives it the appearance of lovely parcel and the delicious centre is most definitely a gift! Winner of the top goat's milk cheese in Spain in 2003, the unique flavour offers lactic notes with a slightly piquant finish, in particular as you get closer to the rind. Pair with wheat beers or sours and floral rose wines.
