Rachel

Rachel is a modern British goats milk cheese made in Somerset by Pete Humphries. Pete and his Rachel cheese are well-loved in the region and it has won numerous awards worldwide.

Aged for eight weeks, Rachel is washed regularly in a brine solution, giving it a dusky natural rind with occasional yellow spotting.

Once cut, Rachel reveals a silky-smooth ivory paste with a clean and slightly lactic taste. It is said that Peter named Rachel after an old flame, and if you ask him, he will tell you that she, like the cheese, was sweet, curvy and slightly nutty!
