Brie is one of the oldest French cheeses with records dating back to the reign of Charlemagne in 774. This prestigious cheese gets its name from its town of origin, Meaux, in the Brie region of Seine et Marne. At Jacobsons, we love the Brie de Meaux produced by the Societe de Rouzaire, an independent family fromagerie producing Brie for three generations. The cheese is made from family know-how, raw Holstein cow’s milk, and aged in the family cellars.
The bloomy rind is edible and is a result of inoculation with Penicillium Candidum molds. A true Brie will offer layers of flavour ranging from earthy, mushroomy and farmy, with a restrained salt. The flavours of the milk should be present, and the texture will be soft and unctuous to slightly elastic. When young, its rind is a snowy, bloomy white, with peak ripeness occurring when the rind is flecked gently with brown spots. Best enjoyed at room temperature with both rind and paste together in the same bite, this Brie is perfect for pairing with Burgundy wine and great with bubbles!
